HAYMAN EXECUTIVE CHEF RECEIVES PRESTIGIOUS HOTEL AWARD

Overseeing the resort's impressive kitchen operation is Hayman Executive Chef, Glenn Bacon who was named Hotel Executive Chef of the Year at the 2009 HM Awards for Hotel & Accommodation Excellence.
The HM Awards are judged each year by a panel of industry professionals and travel media who vote on nominations across a range of categories from readers of HM Magazine, the premier hotel and accommodation management publicaton.
Chef Bacon has headed a brigade of some 50 Australian and international chefs on Hayman since 2007, introducing his award-winning light contemporary style of cuisine throughout the resort's extensive dining operation including the five acclaimed restaurants, world-class meeting and wedding facilities and other beautiful island settings.
This period has also seen the elevation of The Chef's Table to a Hayman Signature Experience , an exclusive selection - along with a stunning Ocean Massage and Night Dive - offering guests a special taste of this acclaimed destination's unique island and reef surrounds.
MICHAEL MOORE TO PRESENT CULINARY WEEKEND ON HAYMAN
Hayman, Australia’s acclaimed private island destination in the Great Barrier Reef, is inviting renowned chef and restaurateur, Michael Moore to present special culinary events in August 2010.
English-born, Michael Moore is one of Australia's most experienced and respected chefs. He is highly regarded within the food industry for his depth of knowledge, endless energy and motivation. Learning the foundations from family at an early age, Michael's passion for food began when he was only four.
Now, 25 years into a career spanning two continents, Michael has owned and managed numerous top restaurants, both in London and Sydney, earning critical praise both sides of the globe as well as a number of coveted Chefs' Hats from The Sydney Morning Herald Good Food Guide.
Today, Michael is Chef/Owner of the Summit, one of Sydney's iconic restaurants. High above Sydney Harbour, guests are treated to a 360 degree vista that takes in the entire city and beyond.
Michael is also known throughout Australia for his weekly television cooking segments on Mornings with Kerri-Anne and as guest presenter of Fresh, both on Channel Nine.
Typical of his energy and passion, Michael is an established consultant to the food service industry including hotels, airlines, retailers, restaurants and corporate hospitality. Michael is also a regular speaker and judge at industry events and accepts invitations to travel the world representing Australian produce.

The Platinum Series Dinners form a major part of Hayman's ongoing commitment to presenting unique dining experiences to guests, by aligning with celebrated chefs and winemakers for these exclusive events. This dinner will feature a 6-course degustation menu being prepared and presented by Michael Moore, together with superb matching wines. The evening includes a visit to the La Fontaine Wine Cellar and Chocolate Room.

The evening will include the creation of spontaneous dishes using seasonal ingredients and techniques from a range of cuisine styles. HAYMAN CULINARY ACADEMY LUNCHEON COOKING CLASS
Hone your gourmet skills and indulge in the culinary arts with one of Hayman’s Master Chefs to prepare a 3-course wine matched luncheon. The day commences with guests being met by the Chef for coffee, tea and treats from the bakery. Guests will tour one of the Southern Hemisphere's largest kitchens and join a round table presentation of the day’s menu. Following an informative instructional cooking class from the Chef, guests will participate in the luncheon preparation before enjoying a spectacular luncheon with Hayman’s Sommelier introducing specially selected wines for each course.

This exciting interactive cooking class invites guests behind-the-scenes of a professional kitchen to prepare a 3-course wine matched dinner with one of Hayman’s Master Chefs. The evening commences with guests meeting the Chef and touring one of the Southern Hemisphere's largest kitchens before a lively instructional session with our Master Chef. Guests will then participate in the dinner preparation before enjoying a course by course wine matched dinner hosted by the Chef. Hayman’s Sommelier will introduce each wine and conduct a tour of Hayman’s famous La Fontaine Wine Cellar.

Join one of Hayman’s Master Chefs for an exclusive interactive cooking class and prepare a 3-course wine matched gourmet feast. Select your favourite dishes or have the Chef design a menu for you. The class commences with guests being met by the Chef for arrival drinks and canapés. A tour of one of the Southern Hemisphere's largest kitchens is followed by a presentation and cookery instruction as the Chef takes you step by step through the preparation and presentation of the menu. Hayman’s Sommelier will wine match each course and offer in depth information and a visit to the famous La Fontaine Wine Cellar.

A price supplement may be applicable for selecting your own dishes. Personal menu or dish options require a minimum 48 hours’ notice of selections.
Prices are quoted in Australian dollars and are inclusive of a 10% Goods and Services Tax. Hayman accepts cash, travellers cheques and all major credit cards including American Express, Diners, Visa, MasterCard and Bankcard. Hayman applies a 1.5% surcharge for Visa and Mastercard transactions and a 3.5% surcharge for American Express, Diners Club and JCB transactions. EFTPOS facilities are available however limits apply. Hayman does not accept personal or business cheques unless approved prior to arrival.
