Hayman, Australia’s celebrated private island destination in the Great Barrier Reef, is inviting acclaimed chef, Philip Johnson, to present a Platinum Series Dinner in September 2010.
New Zealand-born Philip Johnson, one of Australia’s premier chefs, will join with
award-winning Craggy Range Winery in New Zealand in hosting this special night.
Philip opened his landmark bistro, e’cco, in 1995 and quickly gained recognition, winning the 1997 Remy Martin Cognac/Australian Gourmet Traveller Restaurant of the Year award. Philip continues to receive national and international acclaim for his flare for elegant simplicity, a virtue he has instilled in the dedicated and innovative team of chefs he leads.
He conducts numerous cooking classes, demonstrations and guest chef appearances and has contributed recipes to publications including Great Australian Chefs, in which the legendary Mietta O’Donnell named Philip as one of 50 chefs at the cutting edge of Australian cuisine.
He has also authored five cookbooks with a sixth book due for release this year. They all include a wonderful collection of recipes offering unpretentious food, simply yet stunning, and a reflection of the ideas and beliefs that contribute to the success for which e’cco is renowned.
Hayman enjoys a long-standing relationship with Craggy Range Winery, producer of fine New Zealand wines. Specialising in single vineyard wines, Craggy Range has in a short space of time cemented its position in the upper echelons of New Zealand wine royalty. The winery’s reputation has been largely built around the wines that have been produced from the Gimblett Gravels region near Hawkes Bay.

The Platinum Series Dinners form a major part of Hayman’s ongoing commitment to presenting unique dining experiences to guests, by aligning with celebrated chefs and winemakers for these exclusive events. This dinner will feature a 6-course degustation menu being prepared and presented by Philip Johnson, together with outstanding matching wines from Craggy Range Winery. The evening includes a visit to the La Fontaine Wine Cellar and Chocolate Room.
