New Year’s Eve

Hayman’s New Year’s Eve celebrations featured a dine-around dinner, cocktails, live music, acrobatic performances and fireworks.
The evening began with a ‘Little Taste of Hayman’ for the children.
Little-ones enjoyed party food favourites featuring their very own milkshake station, while clowns, stilt walkers and fire-twirlers provided endless entertainment.
As the sun went down, the adults came out for their share in the festivities.
The night kicked-off with cocktails and canapés by the Hayman Pool, which was lit up by acrobats in glowing ‘Dreamspheres’.
Guests then moved on to Azure for a sumptuous seafood grill. Meanwhile, food stalls showcased Oriental’s mouth-watering cuisine, which was accompanied by plenty of sake of course.
The dine-around experience continued through to Hayman’s contemporary Australian restaurant, Fontaine, which featured exquisite dishes created from fresh produce sourced from across Australia including: Crispy-skinned Duck Confit from Victoria, Mud Crab Cakes from the Northern Territory and Little Tasmanian Lobster Pies, to name a few.
Concurrently, hundreds of wine glasses, and just as many wine bottles, were showcased in Fontaine’s Private Dining Room where the Hayman sommelier was at hand to assist guests match an impressive selection of cheeses with the perfect wine.
Those with a sweet tooth found their way to the Entertainment Centre where there was an incredible array of desserts awaiting to be enjoyed alongside fantastic live music. Australian award-winning performer, Matt Hetherington, had everyone dancing with his eclectic mix of new songs and old favourites.
In the meantime, some guests enjoyed smooth jazz performed by Australian singer, Bevan Addinal, in Club Lounge as the audience enjoyed some delectable chocolate flights.
With so many things to see and do, midnight came around sooner than expected. Fire dancers lead the way to Hayman Beach where families and friends gathered to watch a spectacular fireworks display.
The festivities continued through the night. It was the perfect way to end to 2011 and the perfect beginning to 2012.
