Hayman in the hunter
May 2, 2011Hayman, Australia’s celebrated private island destination in the Great Barrier Reef, is joining with award-winning Bimbadgen Estate in the New South Wales Hunter Valley to present a special culinary experience, Hayman in the Hunter, from 3-5 June 2011.
This exciting event, to be held in Bimbadgen’s acclaimed Esca Bimbadgen restaurant, is part of the Hunter Valley Food and Wine Month in June and will feature superb culinary delights including a blend of local produce and exceptional wines, showcased by extraordinary talent.
Hayman Executive Chef, Glenn Bacon has been issued a challenge to create a menu featuring regional Hunter Valley produce a world away from the local produce and seafood available from Chef Bacon’s tropical home in Queensland’s Whitsundays region.
Chef Bacon will be unveiling a reconcepted and renamed Fontaine restaurant in August 2011. Fontaine will offer a beautiful setting including stunning dining platforms over the Hayman Swan Pond. The new menu will feature contemporary Australian cuisine inspired by the finest locally sourced produce.
In his preparation to delight Esca Bimbadgen diners, Chef Bacon said, “The menu I have selected is a sneak preview of Hayman’s Fontaine restaurant concept, with a regional twist showcasing local Hunter Valley cuisine, paired with delectable Bimbadgen wine. I know it will be a winner, and a real celebration of a marriage between two incredible Australian destinations”.

Friday 3 June will feature the dinner menu only, with lunch and dinner available on Saturday 4 June and Sunday 5 June.
All diners at Esca Bimbadgen during the Hayman in the Hunter event will go into the running to win a fabulous 3-night stay on Hayman including a private dining experience prepared by Chef Bacon at the newly unveiled Fontaine.
