Geoff Lindsay and Ocean Eight Present Hayman Culinary WeekendApril 1, 2010
Hayman, Australia’s acclaimed private island destination in the Great Barrier Reef, is inviting renowned chef and restaurateur, Geoff Lindsay and celebrated vineyard, Ocean Eight to present special culinary events during the Queen’s Birthday Weekend in June 2010.
Geoff Lindsay is Creator and Executive Chef of Pearl, one of Melbourne’s most awarded and creative modern Australian restaurants. A winner of The Age Good Food Guide Chef of the Year, Geoff has forged an exceptional reputation as one of this country’s most dynamic chefs and his food style has been at the forefront of the Australian food culture for more than 20 years.
Each Hayman event will feature specially selected wines from Ocean Eight, the 17-hectare vineyard, situated in Shoreham Victoria. Ocean Eight is a partnership between Chris and Gail Aylward, who started the vineyard on their family property in 2004, and their son, Michael, who makes the wine. The Penguin Good Australian Wine Guide named Ocean Eight as Best New Winery.
Cocktail Function – 11 June 2010

Guests will join an evening aboard a Hayman luxury vessel for a Cocktail Function hosted by Geoff Lindsay with accompanying wines from Ocean Eight, cruising the Whitsundays and taking in the stunning surrounds of Hayman, whilst indulging in the finest of food and wine.
Platinum Series Dinner – 12 June 2010

The Platinum Series Dinners form a major part of Hayman’s ongoing commitment to presenting unique dining experiences to guests, by aligning with celebrated chefs and winemakers for these exclusive events. This dinner will feature a 6-course menu, showcasing the flare for which Geoff Lindsay is synonymous, accompanied by beautiful Ocean Eight wines and includes a visit to the La Fontaine Wine Cellar and Chocolate Room.
Cooking Class – 13 June 2010
12.00noon – 3.00pm
A$220 per person (incl. beverages)
Geoff Lindsay will invite guests into the Main Kitchen to prepare a superb 3-course meal which they will later sit down to enjoy with all other participants in the class. Ocean Eight will present specially selected wines to accompany the meal. The lunch also includes a Hayman Culinary Academy apron and Chef’s Hat, recipe booklet, fact sheet and Cooking Class photograph as a memento of this special culinary experience.
