The weekend commences on Friday night with a Cocktail Reception hosted by Hayman General Manager, Shane Green and the winery representative, followed by a 3-course dinner at Australia’s signature resort restaurant, Fontaine.
On Saturday, guests can enjoy a Hayman Signature Food and Wine Pairing Picnic for two, hosted by Hayman’s Sommelier and the winery representative. In the afternoon, Hayman will be hosting an exclusive educational wine tasting with the winery representative in Fontaine.
At night, The Chef’s Table, a legendary 6-course dining experience, will be presented by Hayman Executive Chef, Glenn Bacon and the winery, and include a visit to the Hayman Chocolate Room and Hayman Cellar.
AUSTRALIA DAY WEEKEND

To celebrate Australia Day on Thursday in true spirit, the resort chefs will be cooking up a fantastic barbecue with everyone’s favourites around the Hayman Pool whilst top band, A14, will be performing the best of Aussie classic hits.
On Friday night, the Hayman General Manager’s Cocktail Reception will be hosted by Shane Green and Andrew Gowdie, Craft Beer Specialist, James Squire, featuring a range of beers from the acclaimed brewery.
On Saturday night, The Chef’s Table will be hosted by Glenn Bacon and Andrew Gowdie and include a visit to the Hayman Chocolate Room and Hayman Cellar.
